what is kombucha??? kombucha is a fungus drink that i home brew, many of you have asked about the process, so i thought, why not blog about it. if any of you are even more interested as to wanting to make your own, well we can talk more detail about it and some how get you a mushroom (fungus) start.kombucha is the living relationship of a number of bacteria and special yeast cultures (the mushroom). This living organism ferments the sweetened tea to become kombucha beverage. the refreshing taste gives one a feeling of well-being. the amount of yeast gives the kombucha beverage an active life which continues after decanting it into bottles. kombucha is highly regarded as an aid in prevention of almost all illnesses.
Therefore... I LOVE MY KOMBUCHA, i have been home brewing for about 9 months now and have noticed a huge difference in my stomach problem and sleeping issues. here is a small list of some of the benefits of drinking kombucha:
clearly lengthens life span (not that we all want that)
is a health remedy against chicken pox and shingles
reduces the formation of wrinkles
aids against the formation of cancer
prevents adverse menopausal symptoms
restores visual acuity
strenghtens leg muscles
heals arthritis
enhances sexual drive
heals sweaty feet, constipation, joint and back pains
heals abscesses
heals blocked arteries and DIABETES (stacey are you paying attention)
strengthens kidneys
heals cataract and heart disease
restores the appetite and heals sleeping disorders
reduces the chance of gall stones and liver problems
reduces obesity and stops diarrhoea
grey hair darkens again and baldness disappears
the list goes on, but i think you get the idea, i have noticed a change in my daily life, maybe you will too. i know there are a lot of crazy drinks, and supplements out now and maybe EVERYTHING IS A HOAX , (or maybe it's all in my head) but who cares.
so here are a few pictures of my process of bottling and brewing.
what kombucha looks like after two weeks of brewing, the mother culture (mushroom) is on top. notice the bright white one on very top, one will grow every time you do a new batch (therefore i can and do share)so im ready to bottle
get out bottles, funnel, strainer etc.

let me tell you bottling at galena is much easier than in my little cottage in boulder, much more space to work with

now the waiting game of two weeks, but while i wait for this batch to brew i have last batch to drink, so its a very happy cycle. brew, drink, brew, drink, brew, drink.
